Instructions

  1. Prepare the Buttermilk Mixture:

    • In a mixing bowl, whisk the buttermilk for a few seconds until it becomes smooth and creamy. Set it aside.
  2. Grind the Spice Paste:

    • In a blender, combine the dry red chillies, grated ginger, half of the garlic cloves, coriander powder, black pepper powder, cumin seeds, and fresh coconut. Add a little water and grind everything into a fine, smooth paste.
  3. Combine with Buttermilk:

    • Add the freshly ground spice paste to the whisked buttermilk. Stir well to mix all the ingredients and set it aside.
  4. Prepare the Tadka:

    • Heat oil in a small frying pan (tadka pan) over medium heat.
    • Once the oil is hot, add the mustard seeds. Wait for them to splutter.
    • Add the remaining dry red chillies and garlic cloves. Sauté for a few seconds until the garlic turns golden brown.
    • Add the curry leaves and let them splutter in the hot oil.
    • Next, add the sliced onions and stir fry until they become golden brown and caramelized.
  5. Final Assembly:

    • Turn off the heat and immediately pour the prepared tadka mixture into the buttermilk-spice mixture.
    • Stir everything together well to combine the flavors.
    • Add salt to taste and stir until it dissolves completely. Adjust the seasoning if necessary.
  6. Serving:

Tips:

  • You can adjust the quantity of dry red chillies depending on how spicy you prefer the dish.
  • To make it richer, you can add a little more coconut to the spice paste for a creamier texture.
  • This buttermilk rasam can also be served with sambar or rasam rice for a complete meal.
