Instructions:

  1. Prepare the Sprouts:
    Begin by soaking the green moong sprouts in water for about 20 minutes. Once soaked, rub the moong sprouts with your hands to remove the skin. This step ensures the sprouts are ready to be used in the curry.

  2. Tempering:
    Heat a kadai (wok) and add 1 teaspoon of oil. Once the oil is hot, add the mustard seeds and curry leaves. Let them splutter, releasing their aroma.

  3. Cooking the Onions:
    Add the chopped onions, a pinch of salt, and sugar to the tempering. Stir continuously over low heat until the onions turn golden brown and caramelized. This step brings out the natural sweetness of the onions, adding depth to the curry.

  4. Add the Sprouted Moong:
    Once the onions are browned, add the sprouted moong beans, tamarind paste, and turmeric powder. Mix well, and cook the mixture covered over low heat for about 5 minutes. This allows the flavors to meld together.

  5. Make the Coconut Paste:
    In a mixer grinder, combine the grated fresh coconut, dry red chillies, coriander seeds, and a pinch of salt. Add a little water and grind everything into a smooth, thick paste.

  6. Combine and Simmer:
    After 5 minutes, open the lid of the kadai and add 1 cup of water to the mixture. Stir in the thick coconut paste, ensuring it’s well incorporated. Let the curry simmer for an additional 3-4 minutes, allowing the flavors to blend.

  7. Final Touches:
    Once the curry has thickened and the ingredients are well combined, turn off the heat.
