Instructions:

Crust:
- Mix shortening, 1/3 cup butter, and flour until well combined.
- Add boiling water, salt, and baking powder. Mix well.
- Separate the dough into 2 balls and place between 2 pieces of wax paper. Roll out each ball.

Filling:
- Peel, core, and slice the Granny Smith apples.
- Lightly mix cinnamon and sugar with the sliced apples.
- Heap the apple mixture into the pastry-lined pie pan and dot with 1 1/2 tablespoons of butter.

Assembly:
- Cover the apple filling with the second rolled-out crust.
- Slit the crust to allow steam to escape during baking.

Baking:
- Preheat the oven to 425Β°F (218Β°C).
- Bake the pie at 425Β°F (218Β°C) for 15 minutes.
- Reduce the temperature to 350Β°F (177Β°C) and continue baking for an additional 45-60 minutes, or until the crust is golden brown and the filling is bubbly.
