Dried Red Chilli 1 piece
White Split Urad Dal 1 teaspoon
Turmeric Powder 1/4 teaspoon
Salt To taste
Oil As needed
Fresh Grated Coconut 5 tablespoons
Small Onions (Chopped) 6, cut into halves
Garlic Cloves (Chopped) 3, finely chopped
Green Chilli 2, sliced

Instructions

  1. Make the Coconut Paste:
    Start by preparing the coconut paste. In a mixer grinder, add the grated coconut, chopped onions, garlic, and green chilies. Grind all the ingredients into a smooth paste. Set it aside.

  2. Cook the Lentils and Spices:
    Heat oil in a pan or wok. Add the urad dal and sauté it until it turns light brown. Add the mustard seeds and let them splutter for about 15 seconds.

  3. Add the Red Chili and Curry Leaves:
    Break the dried red chili into pieces and add it to the pan along with the curry leaves. Let them sauté for about 10 seconds.

  4. Cook the Cabbage:
    Add the chopped cabbage to the pan. Stir well to combine and cook until the cabbage softens. You may cover the pan to speed up the cooking process.

  5. Add the Coconut Paste:
    Once the cabbage is tender, add the ground coconut paste along with turmeric powder and salt. Stir everything together and cook for an additional 3 to 5 minutes until the flavors blend together.

  6. Serve:
    Turn off the heat and your Cabbage Thoran is ready to serve. Serve this delightful dish hot with a side of steamed rice and mixed vegetable sambar for a fulfilling Kerala meal. You can also enjoy it with chapati or roti.
