Chammanthi Chutney Recipe

Ingredients:
- 1 cup coconut, grated
- 1-inch ginger, grated
- 1 onion, finely chopped
- 1 sprig curry leaves
- 1/2 tsp asafoetida (hing)
- 1 tsp mustard seeds
- 2 dry red chilies
- 2 tbsp oil
- Salt, to taste

Instructions:
- To make Chammanthi Chutney, start by adding ginger, dry red chilies, and coconut into a mixer jar. Grind them well into a smooth paste by adding a little water. Set the paste aside.
- Finely chop the onion and set it aside.
- Heat oil in a pan. Add mustard seeds and cook for 10 seconds until they splutter.
- Add the chopped onions to the pan and sauté until they turn soft and golden brown.
- Once the onions are cooked, add curry leaves and the ginger-chili-coconut paste to the pan. Stir well.
- Add a little water and salt, and bring the chutney to a boil. Once it comes to a boil, turn off the heat.
- Serve the Chammanthi Chutney with ghee-roasted dosa and mixed vegetable sambar for a complete meal.
