Kerala Style Puttu Upma with Scrambled Eggs Recipe

Ingredients:

  • 1 cup rice puttu (or wheat puttu), crumbled
  • 1 whole egg
  • 1 teaspoon cumin seeds (jeera)
  • 1/4 teaspoon mustard seeds (rai/kadugu)
  • 1 sprig curry leaves
  • 1 pinch turmeric powder (haldi)
  • 2 green chilies, slit/cut
  • 1/4 teaspoon black urad dal (split)
  • 2 teaspoons oil
  • Salt, to taste

Preparation Time: 5 minutes
Cook Time: 15 minutes

Instructions:

  1. Heat oil in a kadai (wok) over medium heat. Add mustard seeds and let them crackle. Then add cumin seeds and let them sizzle.
  2. Add the split urad dal and sautรฉ until it turns light brown.
  3. Stir in the green chilies, curry leaves, and turmeric powder. Crack the egg into the pan and scramble it for about half a minute until itโ€™s cooked through.
  4. Add the crumbled puttu and salt. Mix well to combine all the ingredients.
  5. Sprinkle a little water over the mixture and mix again. Cover the pan with a lid and cook on low flame for a minute. This will make the puttu softer.
