Instructions

  1. Prepare the Beans: Begin by washing the green beans thoroughly. Trim off the ends and slice them into 1-inch long pieces. Set aside for later use.

  2. Pressure Cook the Beans: In a pressure cooker, place the cut beans and add two tablespoons of water along with a pinch of salt. Cook the beans for just one whistle on medium heat, then turn off the heat. Once the pressure is released naturally, run cold water over the cooker to stop the cooking process. This helps the beans retain their bright green color and avoid overcooking.

  3. Temper the Spices: In a heavy-bottomed pan, heat the coconut oil over medium heat. Add the mustard seeds and let them crackle. Once they begin to pop, add the curry leaves and allow them to splutter, releasing their fragrant oils.

  4. Sauté the Onions: Add the thinly sliced onions to the pan and sauté them until they become tender and translucent. This step adds sweetness and depth to the dish.
