Turmeric Powder 1/2 tsp
Cumin Powder (Jeera) 1 tsp
Oil 1 tbsp
Mustard Seeds (Rai) 1/2 tsp
Coconut (Grated) 1/2 cup
Curry Leaves (Kadi Patta) 6 leaves
Salt To taste

Instructions:

  1. Prep the Vegetables: Start by washing and peeling the carrots. Grate them finely. Finely chop the cabbage, onion, and slit the green chilies. Set them aside in a bowl.

  2. Spice Mixture: In the bowl, add the grated carrots, chopped cabbage, chopped onions, slit green chilies, cumin powder, turmeric powder, and salt. Mix everything together until well combined.

  3. Cooking the Thoran: Heat oil in a pan or kadai over medium heat. Once the oil is hot, add the mustard seeds and let them crackle for about 10 seconds.

  4. Add Curry Leaves & Veggies: Add the curry leaves to the pan. Then, add the vegetable mixture and stir well. Cover the pan with a lid and cook for 10 to 12 minutes, allowing the vegetables to soften. Stir occasionally to avoid burning.

  5. Add Coconut: Once the vegetables are tender, add the grated coconut to the pan. Stir everything together and let it cook for another 3 minutes.

  6. Final Touches: After 3 minutes, remove the pan from the heat. The Cabbage and Carrot Thoran is now ready to serve.

  7. Serving Suggestion: Serve this delicious thoran hot with rice and mixed vegetable sambar or dal. You can also enjoy it with a dollop of ghee for an authentic Kerala meal.
