Instructions

  1. Prepare the Chow Chow
    Start by peeling the chow chow (chayote) and cutting it into small cubes. Wash the pieces thoroughly.

  2. Cook the Chow Chow
    In a pressure cooker, add the chopped chow chow along with a little water. Cook it until it becomes soft (about 2-3 whistles).

  3. Prepare the Coconut Paste
    In a blender, add grated coconut, curry leaves, green chilies, and cumin seeds. Grind the mixture to a smooth paste and set it aside.

  4. Tempering the Spices
    Heat oil in a small frying pan. Once the oil is hot, add mustard seeds (rai) and let them splutter for about 10 seconds. Add the curry leaves and turmeric powder, stirring them in for another 10 seconds.

  5. Combine and Cook
    Add the tempering and the prepared coconut paste to the cooked chow chow in the pressure cooker. Mix everything well and cook for an additional 5 minutes, allowing the flavors to blend together.

  6. Serve
