Kerala Style Okra Thoran Recipe – A Flavorful Dish with a Kerala Twist

If you’re looking to add a delicious and healthy vegetable dish to your meal, Kerala Style Okra Thoran (Vendakkai Thoran) is a wonderful choice. This traditional Kerala recipe is not only easy to prepare but also bursting with vibrant flavors, thanks to the use of coconut, mustard seeds, and curry leaves. It is a perfect accompaniment to your rice or sambar, making it a great option for lunch. This recipe is diabetic-friendly, light, and full of nutrients.

Ingredients:

Ingredient Quantity
Okra (Vendakkai) 500 grams, cut
Small onions (shallots) 10, finely chopped
Grated coconut 1/4 cup
Green chilies 2, finely chopped
Curry leaves 1 sprig
Mustard seeds 1/2 teaspoon
Turmeric powder 1/2 teaspoon
Salt As per taste
Oil As required

Preparation Time: 15 minutes

Cooking Time: 15 minutes

Total Time: 30 minutes

Servings: 4

Cuisine: Kerala

Course: Lunch

Diet: Diabetic Friendly

Instructions:

Step 1: First, gather all the ingredients and keep them aside in separate bowls. This will help make the cooking process smooth and quick.

Step 2: Heat some oil in a pan or wok over medium heat. Once the oil is hot, add mustard seeds and curry leaves. Let them splutter for about 15 seconds, releasing their wonderful aroma into the oil.

Step 3: Add finely chopped onions to the pan and sauté them until they turn soft and translucent. This should take about 3-4 minutes.

Step 4: Once the onions are soft, add the finely chopped green chilies, okra (vendakkai), and salt. Stir everything together well to combine.

Step 5: Cover the pan with a lid and cook the okra on low to medium heat for about 10 minutes, or until the okra becomes tender. Stir occasionally to prevent it from sticking to the bottom of the pan.

Step 6: Once the okra is cooked and tender, add the turmeric powder and grated coconut. Mix well and cook for another 2 minutes, allowing the coconut to blend in with the okra and absorb the flavors.

Step 7: Turn off the heat and let the dish sit for a minute or two. Your Kerala Style Okra Thoran is now ready to be served!

Serving Suggestion: Serve this flavorful Okra Thoran hot with rice, sambar, and a side of tangy tomato-onion chutney for a traditional Kerala lunch experience.

This Kerala-style Okra Thoran is not only a feast for your taste buds but also a healthy addition to your daily meals. Its simplicity and bold flavors make it a perfect dish for anyone looking to enjoy authentic Kerala cuisine right at home!
