Instructions:

  1. Prepare the Tapioca:

    • Start by peeling the tapioca root, cutting it into small pieces, and washing it thoroughly.
    • Bring a large pot of water to a boil. Add a pinch of salt and drop the tapioca pieces into the boiling water.
    • Let the tapioca cook for about 45 to 60 minutes until it becomes soft and tender.
    • Once cooked, drain the water from the tapioca and set it aside.
  2. Make the Coconut Curd Chutney:

    • In a blender, combine the grated fresh coconut, chopped shallots, and green chilies. Blend everything together until it forms a fine paste.
    • Add the coconut mixture to a bowl of sour curd (Greek yogurt) and season with salt to taste. Mix everything well to combine the chutney. Adjust seasoning according to your preference.
  3. Serve:
