Kashmiri Red Chilli Powder 1/2 tbsp
Turmeric Powder 1/2 tbsp
Salt To taste
Coriander Leaves 2 tbsp, finely chopped

Instructions

  1. Heat the Oil: Begin by heating oil in a pan. Add the mustard seeds and dried red chillies. Let the mustard seeds crackle and release their aroma. This will infuse the oil with a lovely mustard flavor.

  2. Add Aromatics: Once the mustard seeds start crackling, add the curry leaves, green chillies, and thinly sliced onions. Cook this mixture for about a minute, allowing the onions to soften and become translucent.

  3. Cook the Ginger Garlic Paste: Next, add the ginger garlic paste and sauté for another minute. The fragrant paste will further elevate the flavor profile of the dish.

  4. Add Spices and Tomatoes: Stir in the Kashmiri red chilli powder and turmeric powder. Now, add the chopped tomatoes to the pan. Cook the tomatoes, stirring occasionally, until they become soft and release their juices. This will take about 5-7 minutes.

  5. Season the Fry: Add salt to taste and continue cooking for another minute, allowing all the flavors to meld together.
