Instructions

Step 1: Prepare the Mutton

  1. Clean the mutton pieces thoroughly and pat dry.
  2. Add the mutton pieces to a pressure cooker along with cumin seeds, a few slices of shallots, turmeric powder, and salt.
  3. Pour in 1/2 cup of water, close the lid, and pressure cook the mutton for 1 whistle. Remove from heat and set aside.

Step 2: Roast the Masala

  1. Heat 1 teaspoon of coconut oil in a wok or pan. Add shallots, ginger, and garlic, and sauté for 2 minutes until aromatic. Remove from the pan and set aside.
  2. In the same pan, add the dried red chilies, coriander seeds, cumin seeds, fennel seeds, cinnamon, cloves, and cardamom pods. Roast on low heat until fragrant.
  3. Add the grated coconut to the pan and continue roasting until the coconut turns golden brown. Take care not to burn the spices. Remove from the pan and let cool.

Step 3: Grind the Masala

  1. Combine the roasted shallots, ginger-garlic mix, and the spice-coconut mixture in a blender.
  2. Add a little water and grind to a smooth paste. Set aside.

  1. Heat 1 tablespoon of coconut oil in a wok or large pan. Add sliced shallots and sauté until translucent.
  2. Toss in the fresh coconut slices and stir.
  3. Add the cooked mutton pieces and roast for about 5 minutes to coat them with the flavors.
  4. Stir in the tomato slices and cook until the tomatoes soften.

Step 5: Add the Spices and Masala

  1. Mix in the red chili powder and adjust salt to taste.
  2. Pour the ground masala paste into the pan, stirring well to combine. Cook until the oil starts to separate from the sides of the mixture.

Step 6: Final Touches

  1. Pour the reserved mutton cooking liquid into the pan to achieve the desired consistency. Bring the curry to a boil and reduce to a simmer.
  2. Sprinkle curry leaves over the curry and check the seasoning. Adjust as needed.
