Instructions

  1. Prepare the Sabja Seeds:
    Begin by soaking the basil seeds (sabja) in enough water to cover them. Let them soak for about 15 minutes. As they soak, the seeds will expand and become gelatinous. Once ready, drain any excess water and set them aside.

  2. Cook the Falooda Sev:
    Bring a pot of water to a boil. Once boiling, turn off the heat, add the falooda sev, and let it sit in the hot water for about 15 to 20 minutes. After this, drain the water and set the sev aside.

  3. Make the Saffron Pistachio Milk:
    In a pan, pour the milk and bring it to a boil over medium heat. Once the milk begins to boil, reduce the flame to a simmer. Add the crushed pistachios, sugar, and saffron strands to the milk, stirring continuously. Let the milk simmer for a few more minutes until it slightly thickens. Remove the pan from the heat and allow the milk mixture to cool to room temperature.

  4. Chill the Milk:
    Once the milk has cooled, place it in the refrigerator for about 15 minutes to chill and intensify the flavors.

  5. Assemble the Kesar Pista Falooda:
    To assemble, take a tall serving glass. First, add a tablespoon of the soaked sabja seeds to the bottom. Next, layer in 2 tablespoons of cooked falooda sev. Then, pour the chilled saffron pistachio milk into the glass, filling it about 3/4 of the way.

  6. Top with Ice Cream and Garnish:
    Add a generous scoop of ice cream on top of the milk. For extra color and flavor, garnish the falooda with a sprinkle of tutti frutti and a few glazed cherries.

  7. Serve and Enjoy:
