Keto Beef Meatballs (Bakso Sapi Keto)

Welcome to this delightful recipe for Keto Beef Meatballs – a savory and satisfying dish that aligns perfectly with your ketogenic lifestyle. This recipe combines rich, flavorful beef with aromatic spices, making it an excellent choice for a low-carb meal. Here’s how to create these keto-friendly meatballs:

Ingredients

  • 500 grams beef (a mix of lean meat and fat)
  • 250 grams beef fat (for added richness)
  • 150 ml egg whites (about 4 large eggs)
  • 8 cloves garlic (finely minced)
  • 6 tablespoons crispy fried shallots
  • 2 tablespoons crispy fried garlic
  • 1 tablespoon Himalayan salt (adjust to taste)
  • 2 teaspoons white pepper (or black pepper, to taste)
  • 2 teaspoons beef broth powder (like Royco)
  • 2 tablespoons coconut oil (such as Barco)
  • Water (for boiling the meatballs)

Instructions

  1. Prepare the Meat and Fat:

    • Cut the beef and beef fat into small chunks. This helps in the grinding process and ensures a smoother texture for the meatballs.
  2. Grind the Meat:

    • Using a food processor, grind the beef and beef fat until finely minced. This step ensures that the meatballs will have a uniform texture.
  3. Freeze the Mixture:

    • Transfer the ground beef and fat mixture to a large bowl. Place this bowl in the freezer and let it chill until it is half-frozen. This makes the mixture easier to handle and shape.
  4. Prepare the Spices:

    • In a mortar and pestle or a small grinder, finely grind the garlic, crispy fried shallots, crispy fried garlic, beef broth powder, salt, and white pepper. These spices will add depth and richness to the meatballs.
  5. Mix the Ingredients:

    • Add ice cubes, the partially frozen meat mixture, egg whites, and the prepared spices to a large mixing bowl. Grind or blend this mixture until it reaches a smooth, paste-like consistency. The mixture will be quite soft.
  6. Incorporate the Coconut Oil:

    • Gradually add the coconut oil to the meat mixture, blending thoroughly until evenly incorporated. This step enhances the richness and helps bind the meatballs.
  7. Chill the Mixture:

    • Transfer the mixture to a container, press it down, and cover it with plastic wrap. Refrigerate overnight to allow the mixture to firm up. This makes it easier to shape the meatballs.
  8. Shape the Meatballs:

    • Prepare a bowl of ice water to keep your hands cool while shaping the meatballs. Using wet hands, form the meat mixture into small, round meatballs. For added variety, you can stuff some meatballs with cheese or even a small piece of boiled egg.
  9. Cook the Meatballs:

    • Bring a large pot of water to a boil. Once boiling, turn off the heat and gently drop the meatballs into the water. Turn the heat back on to low, allowing the meatballs to cook slowly. They are ready when they float to the surface.
  10. Drain and Serve:

    • Remove the meatballs with a slotted spoon and let them drain. Serve hot, and enjoy the delicious taste of keto-friendly beef meatballs.

These keto meatballs offer a hearty and flavorful option for those following a low-carb diet. While they may not have the exact same texture as traditional meatballs made with breadcrumbs, their rich, meaty flavor and satisfying texture will surely delight your taste buds. Enjoy them as a main dish, appetizer, or even as a topping for your favorite keto-friendly dishes!
