Mongolian Beef Bok Choy (Keto-Friendly)
Ingredients:
For the Marinade:
- 1 kg beef, thinly sliced
- 1 tablespoon baking powder
- 1 tablespoon garam masala
- 1 tablespoon black pepper
- 1 tablespoon psyllium husk
- 1 cup vegetable oil
For the Sauce:
- 1 cup soy sauce
- 3 tablespoons garlic powder
- 1 tablespoon ginger powder
- 3 tablespoons diet brown sugar
- 1 tablespoon oyster sauce
- 1 tablespoon Tropicana sweet soy sauce
- 1 tablespoon chili flakes
- 1 tablespoon psyllium husk
- 1 tablespoon sesame oil
- 1 cup water
For Additional Ingredients:
- 1 large onion, diced
- 1 bunch bok choy, roughly chopped
- 3 green onions, roughly chopped
Instructions:

Marinate the Beef:
- Place the sliced beef into a resealable plastic bag or container.
- Add the baking powder, garam masala, black pepper, and psyllium husk.
- Seal the bag or container and shake well to ensure the beef is evenly coated with the marinade. Let it marinate for at least 30 minutes.

Prepare Additional Ingredients:
- While the beef is marinating, prepare the additional ingredients by dicing the onion, chopping the bok choy, and slicing the green onions.

Cook the Beef:
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add a portion of the marinated beef to the skillet in a single layer, avoiding overcrowding.
- Cook for about 2 minutes on each side, or until the beef is browned and cooked through. Remove the cooked beef from the skillet and set it aside. Repeat the process with the remaining beef, adding more oil if necessary.

- Remove excess oil from the skillet, leaving about 1 tablespoon.
- Add the soy sauce, garlic powder, ginger powder, diet brown sugar, oyster sauce, Tropicana sweet soy sauce, chili flakes, psyllium husk, sesame oil, and water to the skillet.
- Stir and heat the mixture until it begins to simmer.
