Welcome to a delightful keto-friendly recipe that’s both comforting and nourishing! This Shirataki Egg Stir-Fry with Chicken Liver and Vegetables is a fantastic choice for those following a low-carb diet, yet craving something flavorful and satisfying. Let’s dive into this delicious dish that’s packed with rich flavors and wholesome ingredients.

Ingredients

  • 2 large eggs
  • 1/2 package of Shirataki noodles (also known as konjac or miracle noodles)
  • 2 pieces of fried chicken livers (prepared in advance)
  • 2 pieces of fried chicken gizzards (prepared in advance)
  • 4 small bird’s eye chilies (sliced, adjust to taste)
  • 1 carton of Sun Kara coconut milk
  • 1 cup water
  • Ground spices:
    • 3 cloves garlic
    • 5 shallots
    • 1 candlenut (or substitute with macadamia nut)
    • Black pepper
    • Salt (to taste)
  • Vegetables:
    • 1 stalk green onion (chopped)
    • 1 stalk celery (chopped)
    • 1 stalk green mustard greens (chopped)

Instructions

  1. Prepare the Spice Blend:
Begin by finely grinding the garlic, shallots, and candlenut together. You can use a mortar and pestle or a food processor for this. The result should be a smooth paste, which will form the base of your stir-fry’s flavor.

  2. Cook the Spice Blend:
Heat a small amount of oil in a pan over medium heat. Add the ground spice paste and sauté until it becomes fragrant and golden brown. This should take about 2-3 minutes.

  3. Add the Eggs:
Crack the eggs into the pan with the sautéed spices. Stir gently to scramble the eggs and cook them through.

  4. Incorporate the Vegetables:
Add the chopped green onion, celery, and mustard greens to the pan. Stir well to combine with the egg mixture.

  5. Add Liquids:
Pour in the water and coconut milk, stirring to mix. Let the mixture simmer for a few minutes, allowing the flavors to meld together.

  6. Add Shirataki Noodles:
Slice the Shirataki noodles and add them to the pan. Continue to simmer until the noodles are heated through and the liquid has slightly reduced. This should take around 5-7 minutes.

  7. Season and Serve:
Taste and adjust seasoning with salt and black pepper as needed. Allow the dish to cook until the liquid has reduced to your desired consistency.

  8. Enjoy:
Serve hot and enjoy this flavorful, low-carb dish that’s perfect for a satisfying meal.

Bon Appétit!
