Ingredients:

Dry Ingredients:

  • 100 grams keto-friendly bread flour
  • 3 packets Diabetasol (a sugar substitute)
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

Wet Ingredients:

  • 100 milliliters thick kefir, plain yogurt, or buttermilk
  • 2 large eggs, beaten
  • 1 teaspoon smoked beef essence (Toffieco brand, or a suitable alternative)

Additional Ingredients:

  • 1 can of low-carb tuna (such as Kingfisher brand)
  • 100 grams grated cheddar cheese
  • 50 grams extra grated cheddar cheese for topping

Instructions:

  1. Preheat the Oven:
    Begin by preheating your oven to 180°C (350°F). Prepare a muffin tin by greasing each cup with a bit of butter to prevent sticking.

  2. Mix Dry Ingredients:
    In a large bowl, combine the keto bread flour, Diabetasol, salt, baking powder, and baking soda. Mix these dry ingredients together with a fork until evenly distributed.

  3. Combine Wet Ingredients:
    In a separate bowl, whisk together the kefir (or yogurt or buttermilk), beaten eggs, and smoked beef essence until well blended.

  4. Prepare Tuna:
    Drain the tuna from the can and use a fork to flake it into smaller pieces.

  5. Combine Ingredients:
    Gently fold the wet ingredients into the dry ingredients until just combined. Be careful not to overmix. Next, fold in the flaked tuna and 100 grams of grated cheddar cheese.

  6. Fill Muffin Tin:
    Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.

  7. Add Topping:
    Sprinkle the remaining 50 grams of grated cheddar cheese over the top of each muffin for a delicious cheesy crust.

  8. Bake:
    Place the muffin tin in the preheated oven and bake for 45-50 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean. Avoid opening the oven door during baking to ensure even cooking.
