Dubuk Vade Recipe – Khandeshi Gram Flour Dumpling Curry

Description:
Dubuk Vade is a traditional Khandeshi delicacy originating from Nashik, Maharashtra. This flavorful curry features spicy gram flour dumplings, with coconut and onions as the base. The dish is infused with the signature Khandeshi “Kala Masala” which adds a rich depth of flavor. For an authentic taste, you can prepare the masala from scratch, but if you’re short on time, store-bought masala or even your regular garam masala can work well as substitutes.

Ingredients

To Grind:

  • 2 Onions, finely chopped
  • 4 cloves Garlic, chopped
  • 1/4 cup Fresh coconut, grated
  • 1/2 cup Coriander (Dhania) Leaves, chopped

For the Curry:

  • 1 teaspoon Cumin seeds (Jeera)
  • 1 tablespoon Red Chilli powder
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 3 tablespoons Garam masala powder
  • Salt, to taste

For Bhadi/Vade (Dumplings):

  • 1/2 cup Gram flour (besan)
  • 1 teaspoon Red Chilli powder
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Salt, to taste

Preparation Time: 10 minutes

Cooking Time: 35 minutes

Instructions:

  1. Prepare the Base:

    • Heat a kadai (wok) on medium heat and drizzle in some oil.
    • Add the chopped onions and garlic, and sauté until the onions soften and turn golden brown.
    • Once the onions are lightly browned, add the grated coconut. Sauté for an additional 5 minutes until the coconut roasts well.
    • Stir in the chopped coriander leaves and sauté for another 2 minutes. Turn off the heat.
    • Allow the mixture to cool down slightly, then blend it with a little water in a mixer until smooth and creamy.
  2. Make the Dumplings (Vade):

    • In a bowl, combine the gram flour (besan), red chilli powder, turmeric powder, and salt.
    • Add a little water and knead the mixture into a smooth dough.
    • Shape the dough into small round balls or dumplings (Vade).
  3. Cook the Curry:

    • In a separate pan, heat some oil and add cumin seeds (jeera). Let them sizzle for a few seconds.
    • Add the prepared ground mixture to the pan and cook for a few minutes, stirring occasionally.
    • Add red chilli powder, turmeric powder, garam masala powder, and salt. Stir well.
    • Pour in some water to adjust the consistency of the curry to your preference.
    • Gently drop the prepared dumplings (Vade) into the curry. Allow them to cook for 10–15 minutes, or until they are fully cooked and tender.
  4. Serve:

    • Once the dumplings are cooked, remove from heat and serve the Khandeshi Dubuk Vade hot with steamed rice or flatbread.
