Seafood Locicero Recipe

🍽️ Servings: 4 🍽️

Ingredients:

  • 12 mussels
  • 8 clams
  • 12 shrimp
  • 8 scallops
  • 4 kiwi puree
  • 8 gingerroot
  • A dash of marsala wine
  • 1 tablespoon light brown sugar
  • 4 tablespoons soy sauce
  • 1 lemon
  • 1/2 cup veal demi-glace
  • 1/4 cup beef broth
  • 1 kiwi
  • 1 tablespoon sugar
  • 2 1/2 cups white wine
  • 4 cups water
  • Fresh basil leaves
  • Green onion
  • Pimiento
  • 1/4 teaspoon dried anise
  • 2 eggs
  • 1 cup parmesan cheese

Instructions:

  1. In a saucepan, bring veal demi-glace (or broth) to a simmer, reducing it by half.
  2. In a separate pan, sauté peppers and ginger with the brown sugar until fragrant.
  3. Deglaze the pan with marsala wine, reducing until almost all liquid evaporates. Add beef broth and continue reducing by half.
  4. Stir in soy sauce and lemon juice to the mixture.

🥝 Kiwi Puree:

  1. Peel and chop the kiwi.
  2. Cook kiwi and sugar over a low flame until the sugar begins to break down.
  3. Deglaze with white wine, reducing the mixture. Add water and reduce again by half.
  4. Puree the mixture and strain to achieve a smooth kiwi puree.

🍝 Pasta Pancakes:

  1. Cook cappellini until slightly past al dente. Drain the pasta.
  2. In a mixing bowl, combine all ingredients thoroughly. Adjust with more breadcrumbs if needed.
  3. Press the mixture into a lightly oiled 9″ pie pan. Freeze until firm.
  4. Remove and cut into 4 wedges.

🔥 To Serve:

  1. Saute the pasta pancakes until golden brown on one side. Flip and bake in a preheated 350°F oven for 5 minutes.

🍤 Seafood Preparation:

  1. An hour before serving, marinate scallops and shrimp in a mixture of 1/2 cup white wine and 1/4 cup lemon juice.
  2. Poach mussels and clams in white wine until done.
  3. Grill or sauté shrimp and scallops until done.

🍽️ Plating:

  1. Cover half of each plate with 2 oz of the ginger-pepper sauce.
  2. Garnish the other half of each plate with a pasta pancake.
