Ingredients:

  • 2 large eggs
  • 1 carrot
  • 2 green beans
  • Chicken seasoning powder (Masako) – to taste
  • Ladaku (or your preferred seasoning) – to taste
  • Chopped green onions – to taste
  • Cooking oil

Instructions:

  1. Prepare the Vegetables: Begin by finely dicing the carrot and green beans. If you’re using fresh green onions, slice them thinly.

  2. Mix the Eggs: In a bowl, crack the eggs and whisk them until well blended. Stir in the chopped green onions, chicken seasoning powder, and Ladaku to taste.

  3. Cook the Vegetables: Heat a small amount of cooking oil in a pan over medium heat. Add the diced carrots and green beans. Sauté until they are tender but still crisp. If you prefer, you can skip this step and add the vegetables raw later, but cooking them first helps to enhance their flavor and texture.

  4. Prepare the Omelette Base: Pour a portion of the egg mixture into the pan, ensuring it covers the bottom evenly. Allow the eggs to cook until they are just starting to set but still slightly runny on top.

  5. Add the Vegetables: Spread the cooked vegetables evenly over the partially set omelette.

  6. Roll the Omelette: Carefully lift one edge of the omelette and begin rolling it over the vegetables, creating a tight roll. Once the first layer is rolled up, pour a bit more egg mixture into the pan, allowing it to flow underneath the rolled omelette, and continue cooking.

  7. Finish Rolling: Once the second layer of egg has set slightly, roll the omelette over to incorporate the new layer with the first. Continue to cook until the omelette is fully set and golden brown.

  8. Serve: Gently remove the omelette from the pan and let it cool for a few minutes before slicing into bite-sized pieces.
