Chili with Lamb and Black Beans Recipe

Instructions:
For Beans:
- Soak black beans overnight in 2 quarts of water.
- In a large saucepan, bring soaked beans to a boil.
- Add lamb bones, bouquet garni, and 1 crushed garlic clove.
- Reduce heat and simmer until beans are tender but not mushy, approximately 2 hours.
- Skim occasionally and add more water if necessary to keep beans submerged.
For Chili:
- Heat 3 tablespoons of olive oil in a large heavy saucepan over moderate heat.
- Add onions and cook until soft, about 10 minutes.
- Stir in 2 cloves of minced garlic and cook for about 3 minutes.
- Transfer the onion and garlic mixture to a plate using a slotted spoon.
- Add the remaining olive oil to the pan and increase the heat to medium-high.
- Add lamb and cook until no longer pink, breaking it up with a spoon, approximately 6 minutes.
- Return the onion mixture to the pan and add chili powder, ginger, thyme, red chili, marjoram, peppers, and allspice.
- Stir for 5 minutes.
- Add Italian tomatoes (and half of their liquid if canned) and bring to a boil.
- Reduce heat and simmer for another 5 minutes.
- Pour in 3/4 cup of wine and simmer, skimming occasionally, for 30 minutes.
- Drain the soaked beans and reserve the cooking liquid.
- Discard the lamb bones and bouquet garni.
- Add beans and the remaining wine to the chili mixture.
- Season with salt and any additional seasoning as necessary.
- Simmer for 30 minutes, adding bean cooking liquid as needed to keep the chili moist or soupy, as desired.
- For optimal flavor, refrigerate the chili for 24 hours before serving.
- Reheat before serving.
