Green Grapes (juice) 200 ml
Caster Sugar 1 tsp
Unflavored Gelatin 1-1/4 tsp
Fresh Green Grapes (chopped) 10 pieces
Water 2 tsp
For the Black Grapes Layer Quantity
Black Grapes (juice) 200 ml
Caster Sugar 1 tsp
Unflavored Gelatin 1-1/4 tsp
Fresh Black Grapes (chopped) 10 pieces
Water 2 tsp

Instructions:

1. Make the Vanilla Panna Cotta Layer:

  • Soak Gelatin: Start by soaking the gelatin in 2 teaspoons of water and set it aside to bloom.
  • Prepare the Panna Cotta Mixture: In a saucepan, combine the fresh cream and milk, and place it over medium heat. Once the mixture begins to heat up, add the caster sugar and stir until it dissolves completely.
  • Add Gelatin: When the milk-cream mixture starts bubbling at the edges, remove it from the heat. Stir in the bloomed gelatin and vanilla extract, ensuring the gelatin dissolves completely.
  • Simmer the Mixture: Return the mixture to low heat and continue to cook for 1-2 minutes while stirring constantly. Afterward, strain it through a fine sieve to ensure smoothness.
  • Layer the Panna Cotta: Pour about half an inch of the vanilla panna cotta mixture into your dessert glasses (preferably 120 ml glasses). Refrigerate or freeze for 30 minutes or until it sets. Keep the remaining panna cotta aside in a warm place for the next layer.

2. Make the Green Grapes Layer:

Ensure that the green juice has cooled down before pouring to avoid melting the panna cotta layer. Add some chopped green grapes to the green layer for extra texture.
  • Freeze: Return the glasses to the freezer for 20-25 minutes or until the green layer is set.

3. Make the Black Grapes Layer:

  • Repeat the Process: Follow the same steps as you did for the green grapes layer. Soak gelatin in water, heat the black grape juice with sugar, add the gelatin, and strain.
  • Layer the Black Grapes: After the green layer is set, carefully pour the black grape juice mixture over the green layer. Add some chopped black grapes for additional texture.
  • Freeze: Place the glasses in the freezer for another 25-30 minutes or until the final layer sets.
