Picnic Jar with Yogurt Cream and Pavesini

Ingredients:

Pavesini biscuits 32

Instructions:

  1. Make the Italian Meringue:
    Start by preparing the Italian meringue. Pour the water into a small saucepan, then add the sugar. Place the saucepan over medium heat and bring the sugar-water mixture to a temperature of 121Β°C. As the syrup reaches 114Β°C, place the egg whites in a separate bowl. Using electric beaters, whip the egg whites until soft peaks form. Set them aside.

  2. Whip the Cream:
    In another bowl, pour the fresh liquid cream and beat it with electric whisks until it forms a semi-whipped texture.

  3. Combine the Meringue and Cream:
    Gradually add the meringue mixture into the whipped cream, stirring gently from the bottom upwards using circular motions to maintain the airy texture.

  4. Prepare the Yogurt Cream:
    Transfer the yogurt mixture into a piping bag fitted with a smooth nozzle (6mm in diameter) and refrigerate it for 15 minutes to firm up slightly.

  5. Prepare the Apricot Jam:
    In a separate piping bag, fill with the apricot jam. You won’t need a nozzle for this step.

  6. Assemble the Jars:
    Now it’s time to assemble your picnic jars. Start by layering a generous amount of yogurt mousse at the bottom of each jar. Then, add a layer of apricot jam. Follow this with another layer of yogurt mousse.

  7. Add the Pavesini:
    Take the Pavesini biscuits and place them vertically along the edges of the jar, creating a ring around the layers. Continue with another layer of apricot jam, then yogurt mousse. Add another layer of jam, then finish with a final layer of yogurt mousse, reaching the top of the Pavesini biscuits.

  8. Finish with Apricot:
    Top off the jars with cubes of fresh or candied apricot. This adds a fresh, fruity touch that balances the sweetness.

  9. Chill and Serve:
    Place the jars in the fridge to chill until you’re ready to serve them. The dessert can be stored in the fridge for later enjoyment.


Tips:

  • If you want a more intense apricot flavor, feel free to add more jam or use a blend of fresh apricots and jam.
  • For a crunchier texture, add extra biscuits between the layers of mousse and jam.
