Lebanese Style Caramelized Onion Pilaf with Fried Eggs

Ingredients:
- 1 cup Foxtail Millet
- 1/2 cup Masoor Dal (Whole)
- 1/2 cup Sweet Corn
- 2 Onions, sliced
- 4 cloves Garlic, chopped
- 1-inch Cinnamon Stick (Dalchini)
- 1 teaspoon Cumin Seeds (Jeera)
- 1 tablespoon Cumin Powder (Jeera)
- 1 teaspoon Black Pepper Powder
- 1 teaspoon Sugar
- 1 Whole Egg
- Salt and Pepper, to taste

Cooking Time: 30 minutes
Instructions:
- Heat oil in a pressure cooker over medium heat. Add cumin seeds and allow them to crackle for a few seconds.
- Add the sliced onions and chopped garlic. Sauté until the onions become soft and translucent.
- Stir in sugar and cook until the onions caramelize and turn golden brown.
- Add cumin powder, salt, and black pepper powder. Stir and cook for a few more minutes.
- Rinse the foxtail millet and add it to the cooker, along with 2 cups of water (or chicken stock for added flavor). Close the lid and pressure cook for 4 whistles.
- After cooking, allow the pressure to release naturally. Open the lid and add the sweet corn. Sauté the mixture on the stove until the sweet corn is cooked through.
- Taste and adjust the salt as necessary. Serve the pilaf in a bowl.
- For the fried egg, follow your preferred method of frying. Place the fried egg on top of the pilaf.
