  • 1/3 cup light brown sugar
  • 1/2 cup quick-cooking oats
  • 1/2 cup pecans
  • 1/2 cup walnuts
  • 1 teaspoon ground cinnamon

Instructions:

Preparing the Starter:

  1. Day 1: In a glass bowl, combine 2 cups of unbleached all-purpose flour, 2 cups of warm water, and 1/4 teaspoon of active dry yeast. Mix thoroughly and leave uncovered on the counter. Do not refrigerate.
  2. Day 2-4: Stir well each day with a wooden spoon.
  3. Day 5: Stir in 1 cup of milk, 1 cup of flour, and 1 cup of sugar. This is called feeding the starter.
  4. Day 6-8: Stir well each day with a wooden spoon.
  5. Day 9: Stir well, adding again 1 cup of milk, 1 cup of flour, and 1 cup of sugar.
  6. Day 10-11: Stir well.
  7. Day 12: Ladle out one cup of starter into glass jars with lids. You should have four one-cup jars. Keep one jar to make bread now. Give the other two jars to friends to make bread. Keep the fourth jar for yourself to use as a starter again.
  8. For Your Own Starter: Add 1 teaspoon of sugar to the fourth jar and refrigerate. The sugar will keep it alive and feed the yeast. Date the jar.
  9. Every 10 Days: Remove the starter, transfer it to a bowl, and feed it with 1 cup of milk, 1 cup of sugar, and 1 cup of flour. Stir well. Leave it uncovered on the counter for 2 days, then either bake it or share it again, keeping some for yourself.
