Lemon Coconut Tassies Recipe

Ingredients:

  • 2 eggs
  • 1/2 cup sugar
  • 2 tbsp butter
  • Zest of 1 lemon
  • 1 tbsp lemon juice
  • 1/4 cup shredded coconut

Instructions:

  1. Preheat your oven to 350°F (175°C). Prepare mini muffin cups by lining them with tassie pastry.

  2. In a mixing bowl, beat together the eggs, sugar, butter, lemon zest, and lemon juice until well combined.

  3. Stir in the shredded coconut until evenly distributed throughout the mixture.

  4. Divide the mixture evenly among the 24 mini muffin cups or tassie cups.
