Vanilla Extract 1 teaspoon
Whole Eggs 2

Preparation Time: 20 minutes

Cooking Time: 6 hours and 40 minutes (includes refrigeration)

Yield: Serves 8-10

Instructions

Step 1: Prepare Lemon Curd
Start by whisking together the whole eggs, egg yolks, and caster sugar in a saucepan over low heat. Continue whisking until the mixture becomes smooth and well-combined. Once the eggs are thoroughly blended, add in the butter, lemon juice, and a pinch of lemon zest. Keep whisking gently on low heat, allowing the curd to thicken. Be careful not to overcook, as this can lead to the eggs scrambling. Once the curd has thickened, remove the saucepan from heat, strain the mixture to remove any solids, and let it cool completely. Refrigerate until ready to use.

Step 2: Make the Crust
In a food processor, blend the ginger cookies and salted butter until they form a coarse mixture. The crumbs should hold together when squeezed, but easily break apart when released. Transfer the mixture into a 7-inch springform pan with a removable base, pressing it firmly into the bottom to form an even crust. Place the pan in the freezer while you prepare the cheesecake batter.

Step 3: Prepare the Cheesecake Batter
In a large mixing bowl, beat the cream cheese and sugar together until smooth. Add the salt, flour, eggs, vanilla extract, and Greek yogurt to the mixture and blend until completely smooth. Be careful not to overbeat the batter, as this could cause the cheese to curdle. Once the batter is fluffy and soft peaks form, pour it into the chilled crust.

Step 4: Cook the Cheesecake in the Electric Pressure Cooker
Pour about two cups of water into the base of the electric pressure cooker and place a trivet at the bottom. Wrap the springform pan with aluminum foil to prevent any water from seeping into the batter. Carefully place the pan on the trivet inside the cooker. Lock the lid and set the pressure nozzle to the pressure mode. Set the timer for 30 minutes and allow the cheesecake to cook.

Step 5: Release the Pressure
After 30 minutes of cooking, allow the pressure to release naturally. Check the cheesecake by inserting a knife or tester; it should come out clean when the cheesecake is done. Let the cheesecake cool at room temperature, then refrigerate for at least 5 to 6 hours (or overnight if possible) to let the flavors set.

Step 6: Serve
Once chilled, slice the cheesecake into wedges and generously spoon over the prepared lemon curd topping. Serve this rich, creamy cheesecake as the perfect dessert after a hearty meal, such as Chicken Steak with Pan Roasted Vegetables and Potato Mash or Ultimate Potato Gratin Dauphinois.

Tips for Perfection:

  • Ensure the cheesecake batter does not get overbeaten to maintain a smooth texture.
  • Refrigerating the cheesecake for several hours allows the flavors to fully develop.
  • You can experiment by adding fresh fruits on top of the lemon curd for an extra burst of flavor.
