Directions:

  1. In a large bowl, whisk together the all-purpose flour and salt until crumbly.
  2. Add chunks of unsalted butter to the flour mixture and mix until you achieve a crumbly texture.
  3. Incorporate the sour cream and egg yolk into the mixture, stirring until the dough becomes smooth and starts to pull away from the sides of the bowl.
  4. Remove the dough from the bowl and shape it into a disk. Wrap it in plastic wrap and chill in the refrigerator for at least 2 hours, or overnight for best results.
  5. Preheat your oven to 375ยฐF (190ยฐC).
  6. Take the chilled dough out of the refrigerator and roll it out on a surface dusted with confectioners’ sugar, using a rolling pin. Roll the dough into a large rectangle about 1/8th of an inch thick.

  9. Place the muffin tin with the dough into the refrigerator until you’re ready to fill them.
  10. Now, let’s prepare the creamy lemon filling: In a mixing bowl, combine the cream cheese, eggs, granulated sugar, vanilla extract, and lemon zest. Mix until the ingredients are creamy and smooth.
