Roasted Chicken with Vegetables
Ingredients:
- 1 kg chicken
- 2 carrots, chopped
- 2 large potatoes, quartered
- 1 large lemon, quartered
- 1 onion, quartered
- 2 cloves garlic, peeled
- 2 shallots, peeled
For the Basting Sauce:
- 3 cloves garlic, minced
- 1/2 tablespoon black pepper
- 1 tablespoon salted butter
- 1 tablespoon olive oil (or sesame oil, as an alternative)
- 1 teaspoon dried oregano

Prepare the Chicken:
- Thoroughly clean the chicken.
- Squeeze the juice of a large lemon over the chicken, then rub with salt.
- Place the chicken in the refrigerator and let it marinate for 1 hour.

Make the Basting Sauce:
- Combine the minced garlic, black pepper, salted butter, and olive oil (or sesame oil) in a bowl.
- Mix well until the ingredients are fully integrated.

Season the Chicken:
- After 1 hour, remove the chicken from the refrigerator.
- Evenly coat the chicken with the basting sauce, ensuring all sides are covered.
- Place the chopped carrots, potatoes, lemon, onion, garlic, and shallots around the chicken. You can also stuff some of these ingredients inside the chicken cavity for added flavor.

- Preheat the oven to the desired temperature for roasting.
- Once the oven is hot, place the chicken in and roast until fully cooked and the skin is golden and crispy.
