1 Begin by sifting the cornmeal, baking powder, and a pinch of salt into a large mixing bowl. Stir to combine, and set aside.
2 Melt the butter in a small saucepan or microwave, and allow it to cool to room temperature.
3 In a separate bowl, crack the eggs and add the lemon zest. Using an electric mixer, beat the eggs while gradually adding the sugar. Continue mixing for about 5 minutes until the mixture becomes light and fluffy.
4 Slowly pour in the cooled melted butter and continue to mix until fully incorporated.
5 Lower the mixer speed and begin adding the dry cornmeal mixture, one spoonful at a time, alternating with the Greek yogurt. Mix until the batter is smooth and homogeneous.
6 Grease a 24 cm (9-inch) round cake pan, and dust it lightly with cornmeal. Pour the batter into the prepared pan and level the surface using the back of a spoon.
7 Preheat your oven to 170°C (340°F) and bake for 60 minutes. To check if the cake is fully cooked, insert a toothpick into the center; if it comes out clean, the cake is ready.
8 Allow the cake to cool for a few minutes before removing it from the pan. Let it cool completely on a wire rack.
