Yield: 32 breadsticks

Ingredients:

  • 1 packet of active dry yeast
  • 1 teaspoon of sugar
  • 1 cup of warm water
  • Zest of 1 lemon
  • 1 teaspoon of salt
  • 1 1/2 tablespoons of finely chopped fresh rosemary
  • 2 tablespoons of olive oil (plus extra for brushing)
  • 2 1/2 to 3 cups of all-purpose flour

Instructions:

  1. Activate the Yeast: In a mixing bowl, combine the active dry yeast, sugar, and warm water. Allow the mixture to stand for 5 minutes until the yeast activates and becomes foamy.

  2. Add Flavor: To the yeast mixture, add the lemon zest, salt, chopped rosemary, 2 tablespoons of olive oil, and 1 1/2 cups of flour. Mix well with a heavy spoon until the dough becomes glossy and stretchy.

  3. Incorporate Flour: Gradually mix in about 1 more cup of flour until the dough reaches a soft consistency. Turn the dough out onto a floured surface and knead it until it becomes smooth and springy, adding more flour as needed to prevent sticking.

  4. Let it Rise: Shape the dough into a 6-inch square and place it on a floured board. Brush the top of the dough with olive oil, then loosely cover it with plastic wrap. Allow the dough to rise at room temperature for approximately 45 minutes, or until it becomes puffy.

  5. Preheat and Prepare: While the dough is rising, preheat your oven to 350ยฐF (175ยฐC) and grease three large baking sheets.

  6. Cut and Shape: Once the dough has risen, gently coat it with 2 tablespoons of flour. Using a floured knife, divide the dough lengthwise into quarters. Work with one quarter at a time, cutting each quarter lengthwise into 8 equal pieces.

  7. Stretch and Arrange: Take one piece of dough and gently stretch it to about 15 inches long. Place it on a prepared baking sheet, making sure to leave at least 1/2 inch of space between each breadstick. Repeat with the remaining dough pieces, distributing them evenly across the baking sheets.

  8. Bake to Perfection: Transfer the baking sheets to the preheated oven and bake the breadsticks until they turn golden brown, approximately 20 minutes. Keep an eye on them to prevent over-browning.

  9. Enjoy Fresh: Once baked, remove the breadsticks from the oven and allow them to cool slightly before serving. These Rosemary and Lemon Breadsticks are best enjoyed fresh from the oven, but they can also be stored in an airtight container for later enjoyment.

  10. Serve and Share: Serve these delightful breadsticks as an appetizer, alongside your favorite dips or spreads, or enjoy them as a flavorful accompaniment to soups, salads, or pasta dishes. Share the joy of homemade bread with family and friends, and savor the delightful combination of rosemary and lemon in every delicious bite! ๐ŸŒฟ๐Ÿ‹๐Ÿฅ–
