Instructions:

Begin by cooking 300g of Carnaroli rice. Once cooked, transfer the rice into a large mixing bowl.

Add two small eggs, 60g of all-purpose flour, the zest of one lemon, a pinch of ground cinnamon, 30g of sugar, and the raisins (previously soaked in warm water). Mix everything together thoroughly until you achieve a soft yet compact dough-like consistency.

Once well combined, cover the bowl and let the dough rest for at least 30 minutes in a cool place. This resting time allows the flavors to meld together and the dough to firm up slightly.
