| Sugar | 1/2 cup | 
| Water | 1/3 cup | 
| Lemon Juice | 1/2 cup | 
| Lemon Rind | 1 lemon, grated | 
Instructions:
- 
Preheat your oven to 180°C (375°F). 
- 
In a mixing bowl, cream together the butter and caster sugar until light and creamy. 
- 
Add the eggs to the butter-sugar mixture and beat well until fully incorporated. 
- 
In a separate bowl, combine the yoghurt, lemon juice, fresh lemon rind, sifted self-raising flour, and bicarbonate of soda. 
- 
Gradually add the flour mixture to the egg mixture, stirring until well combined. 
- 
Grease a 23 cm cake tin and pour the batter into it, spreading it evenly. 
- 
Bake in the preheated oven for about 45 minutes or until a skewer inserted into the center comes out clean.

While the cake is baking, prepare the syrup: Syrup: - 
In a saucepan, combine the sugar, water, lemon juice, and grated lemon rind. 
- 
Cook over low heat, stirring constantly, until the sugar has completely dissolved. 
- 
Allow the syrup to simmer for 4 minutes, intensifying the lemon flavor.

Once the cake is done, remove it from the oven and leave it in the tin. 
- 
Immediately pour the hot syrup over the cake, ensuring it soaks in evenly.

Let the cake cool in the tin for about 5 minutes.
