Ingredients:

Caster Sugar 1/2 cup
Eggs 1
Lemon Juice 2 tbsp
Fresh Lemon Rind 3 tsp
Self-raising Flour 1 cup
Bicarbonate of Soda 1 1/2 tsp
Sugar 1/2 cup
Water 1/3 cup
Lemon Juice 1/2 cup
Lemon Rind 1 lemon, grated

Instructions:

  1. Preheat your oven to 180°C (375°F).

  2. In a mixing bowl, cream together the butter and caster sugar until light and creamy.

  3. Add the eggs to the butter-sugar mixture and beat well until fully incorporated.

  4. In a separate bowl, combine the yoghurt, lemon juice, fresh lemon rind, sifted self-raising flour, and bicarbonate of soda.

  5. Gradually add the flour mixture to the egg mixture, stirring until well combined.

  6. Grease a 23 cm cake tin and pour the batter into it, spreading it evenly.

  7. Bake in the preheated oven for about 45 minutes or until a skewer inserted into the center comes out clean.

  8. While the cake is baking, prepare the syrup:

    Syrup:

    • In a saucepan, combine the sugar, water, lemon juice, and grated lemon rind.

    • Cook over low heat, stirring constantly, until the sugar has completely dissolved.

    • Allow the syrup to simmer for 4 minutes, intensifying the lemon flavor.

  9. Once the cake is done, remove it from the oven and leave it in the tin.

  10. Immediately pour the hot syrup over the cake, ensuring it soaks in evenly.

  11. Let the cake cool in the tin for about 5 minutes.

  12. Serve slices of the Lemon Cake warm, accompanied by a dollop of creamy Greek yoghurt.
