Lemon Tarts Recipe

Ingredients:

Quantity Ingredient
2 cups Plain flour
100g Salted butter
5-6 tbsp Water
1/2 cup Lemon juice
2 Lemons, zest of
1 cup Powdered sugar
4-5 Glazed cherries
1/2 cup Cream
1 Condensed milk

Instructions:

For the Filling:

  1. In a bowl, beat together condensed milk, lemon juice, and lemon zest until well combined.
  2. Chill the mixture in the refrigerator until required.
  3. In another bowl, beat cream until stiff peaks form, then add powdered sugar and mix well.
  4. Transfer the whipped cream into a large piping bag fitted with a star nozzle and refrigerate until needed.
  5. Wash the glazed cherries, drain them, then chop them lengthwise into quarters and set aside.

For the Pastry:

  1. Cut the cold butter into the plain flour using a knife.
  2. Gently mix with your fingers until the mixture resembles breadcrumbs.
  3. Sprinkle chilled water over the mixture and use a knife or fork to bring the dough together into a ball.
  4. Roll out the dough into a thick round on a cold surface, such as marble or stone.
  5. Grease small tart molds and cut out rounds of pastry to fit into the molds.
  6. Press the pastry rounds lightly into the molds and prick them gently with a fork.
  7. Bake the pastry shells blind in a preheated oven at 180°C (350°F) for 15 minutes.
  8. Remove the shells from the oven, allow them to cool, then carefully take them out of the molds and cool completely on a wire rack.

Assembly:

  1. Fill each pastry shell with the prepared lemon filling.
  2. Pipe a swirl of whipped cream on top of each tart.
  3. Decorate with the chopped cherries.
