Start by selecting 4 large lemons with thick skins. Cut off the tops of the lemons, creating a “cap” for each one (as shown in the picture). Use a knife or a serrated blade to carefully remove the pulp. For precision, you may use a special tool or a spoon to scoop out the flesh. Once done, carefully reassemble the lemons and wrap them in aluminum foil. Place the wrapped lemons in the refrigerator to chill. -
Extract Lemon Juice:
Use the pulp you removed from the lemons to extract the juice. Youโll need this juice to make the sorbet. -
Prepare the Sugar Syrup:
In a saucepan, bring the water to a boil, adding the sugar and the zest of two lemons. Be careful not to include the bitter white pith when zesting. Stir the mixture until the sugar dissolves completely. Once the water reaches a boil, remove the saucepan from the heat and allow it to cool. -
Make the Sorbet Base:
Once the syrup has cooled, strain it to remove the lemon zest. Add the freshly squeezed lemon juice to the syrup and mix well. -
Whisk the Egg White:
