Description

Indulge in the bright, zesty flavor of these delightful lemon wedges! Perfectly baked in a pie plate, these tangy bars make an easy yet impressive dessert. Simply sprinkle with powdered sugar or top with whipped cream for an extra touch of sweetness.

Ingredients

  • 1/2 cup (1 stick) butter, softened
  • 1/4 cup powdered sugar, plus extra for sprinkling
  • 1 cup all-purpose flour, divided
  • 3 large eggs
  • 1 cup granulated sugar
  • Zest of 1 lemon
  • 1/4 cup fresh lemon juice
  • 3 tablespoons all-purpose flour

Instructions

  1. Preheat the Oven: Start by preheating your oven to 350°F (175°C). This ensures that the oven is at the right temperature for even baking.

  2. Prepare the Crust: In a food processor, combine the softened butter, 1/4 cup of powdered sugar, and 1 cup of flour. Process these ingredients for about 10 seconds until the mixture resembles coarse crumbs. If you don’t have a food processor, you can achieve the same result using a pastry blender or your fingers to cut the butter into the flour mixture.

  3. Form the Crust: Press the dough evenly into the bottom of a buttered 9-inch round pie plate. Make sure it’s spread evenly across the bottom to form a consistent crust.

  4. Bake the Crust: Place the pie plate in the preheated oven and bake for 12 to 15 minutes, or until the crust is golden brown. This step sets the base for your lemon filling.

  5. Prepare the Lemon Filling: While the crust is baking, whisk together the eggs, granulated sugar, lemon zest, and lemon juice in a bowl. Add 3 tablespoons of flour and mix until the mixture is smooth and well combined.

  6. Add the Filling: Once the crust is baked, pour the lemon mixture evenly over the hot crust. Return the pie plate to the oven and bake for an additional 15 minutes, or until the lemon filling is set and slightly firm to the touch. Be careful not to overbake, as the filling should remain tender.

  7. Cool and Serve: Allow the lemon wedges to cool completely in the pie plate. Once cooled, cut into wedges and sprinkle with extra powdered sugar if desired. For an extra special touch, consider topping with a dollop of whipped cream.
