Ingredients:
- 2 chicken breasts
- 1 lemon
- 2 cloves garlic
- 2 tbsp unsalted butter
- 25g red chile
- 1 bunch spring onions
- 1 cup couscous
- 4 slices pickled ginger
- Juice and rind of 2 limes
- 450g plum tomatoes
- 250g fresh coriander
- 2 tbsp extra virgin olive oil
- Sea salt, to taste
- White pepper, to taste
Instructions:

Prepare the Chicken:
- Remove the skin and sinew from the chicken breasts and slice the meat thinly across the grain.
- Place the chicken slices in a bowl and add lemon rind, half of the minced garlic, and lemon oil.
- Season with salt and pepper, stir to combine, cover, and chill for at least 30 minutes.

Make the Spicy Couscous:
- In a large pan, melt the butter and add the remaining minced garlic, chopped red chile, and coriander seeds. Cook for 1 minute.
- Add spring onions and stock, bring to a boil, then stir in the couscous. Cook until the stock is absorbed.
- Mix in pickled ginger, lime rind, tomatoes, olive oil, lime juice, and fresh coriander. Cover and set aside.

Cook the Chicken:
- Heat a frying pan, add sunflower oil, and flash fry the marinated chicken until tender and lightly caramelized.
- Squeeze lemon juice over the cooked chicken and drain on kitchen paper.

- Reheat the couscous if desired, then place a mound on each serving plate and arrange the chicken slices around it.
- Toss salad leaves with olive oil, lemon juice, salt, and pepper, then pile on top of the couscous.
