Recipe Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. Prepare Dry Ingredients: In a medium-sized bowl, combine the unsifted flour, baking powder, and salt. Mix well and set aside.

  3. Cream Margarine and Sugar: In a large mixing bowl, beat together the margarine and sugar until light and fluffy.

  4. Incorporate Eggs: Add the eggs one at a time, beating well after each addition until the mixture is light and creamy.

  5. Add Lemon Juice: Gradually add the lemon juice to the wet mixture, alternating with the dry ingredients. Mix until just combined.

  6. Beat Egg Whites: In a separate small bowl, beat the egg whites until they form stiff peaks, but ensure they are not dry.

  7. Fold in Egg Whites: Gently fold 1/3 of the beaten egg whites into the batter to lighten it. Then, carefully fold in the remaining egg whites until fully incorporated.
