Instructions:

  1. Prepare the Artichokes:
    Begin by cleaning the artichokes. If you’re unsure of the process, refer to our detailed guide for cleaning artichokes. To prevent browning, place the cleaned artichokes in a bowl of cold water with lemon juice if you’re not using them immediately.

  2. Trim and Slice the Artichokes:
    Cut off the tough, spiky tips of the artichokes. Then, remove the outer, fibrous leaves until you reach the more tender layers. Trim the end of the stem, and from the remaining part, peel off any rough, woody outer layer using a paring knife. Once cleaned, slice the artichokes into thin julienne strips.

  3. Cook the Artichokes:
    In a large pan, heat two tablespoons of extra virgin olive oil and add the whole garlic clove to infuse the oil with flavor. Add the sliced artichokes to the pan and sauté over medium heat. Cook until the artichokes are tender, about 10-12 minutes.

  4. Add the Shrimp:
    When the artichokes are nearly cooked through, add the shrimp to the pan. Sauté for an additional 3-5 minutes until the shrimp turn pink and are fully cooked. Season with salt and black pepper to taste.

  5. Finishing Touches:
    Once the shrimp and artichokes are cooked, remove the pan from the heat. Discard the garlic clove and grate some fresh lemon zest over the mixture to add a zesty finish.
