Strawberry Streusel – A Delightful Dessert

Instructions:
To begin preparing the strawberry streusel, we’ll start with the dough. In the bowl of a stand mixer (or by hand using a hand mixer), place the butter at room temperature — soft but still firm, not too melted. Add the sugar, a pinch of fine salt, and the grated lemon zest. Turn the mixer on low speed, allowing the ingredients to combine and become a smooth paste.
Next, add the almond flour all at once and mix thoroughly until everything is well combined. Once mixed, stop the mixer, transfer the dough onto your work surface, and briefly knead with your hands until it forms a rectangular block. Wrap the dough in plastic wrap and refrigerate for at least one hour, allowing it to become firm and easier to handle.
While the dough is chilling, prepare the strawberry filling. Wash and pat the strawberries dry. Remove the stems and cut them into small pieces. Place them in a saucepan, squeeze in the juice from the lemon you used for the zest, and cook over medium heat for 30 minutes, stirring occasionally. You’ll know it’s done when the mixture thickens and becomes sticky.
Once the strawberries have cooked down, strain the mixture through a fine-mesh sieve to remove the seeds. Let it cool to room temperature.
Once the dough is sufficiently chilled, take it out of the fridge and divide it into two portions: one larger, the other smaller. Grate two-thirds of the larger portion using a coarse grater (or crumble it by hand) onto a sheet of parchment paper. Press this grated dough evenly into a 35x11cm baking pan, creating a base layer.
Next, pour the cooled strawberry filling over the dough base. With the remaining dough, crumble the smaller portion over the top, distributing it evenly to form the streusel topping.
Bake the strawberry streusel in a preheated oven at 170°C (340°F) for 50 minutes, or until golden and set. Once baked, let the dessert cool completely before removing it from the pan and slicing it into rectangular portions.
