Ingredients

For Macerated Berries:

Ingredient Quantity
Blueberries 1 cup (fresh or frozen)
Cranberries 1 cup
Water 2 cups
Brown Sugar (Demerara Sugar) 1/2 cup
Lemon Zest 1 teaspoon

For Pudding:

Ingredient Quantity
Fresh Cream 2 cups
Milk 3 cups
Kaffir Lime Leaves 2 leaves
Lemongrass (finely chopped) 1 1/2 tablespoons
Instant Oats (Oatmeal) 3/4 cup
Almond Meal (Badam Powder) 1/2 cup
Sugar 1/2 cup (or more, to taste)
Whole Almonds (Badam, roughly chopped) 2 for garnish

Instructions

Step 1: Preparing the Macerated Berries

  1. In a large bowl, combine the blueberries, cranberries, water, brown sugar, and lemon zest.
  2. Using a masher or the back of a spoon, mash the berries gently to release their juices.
  3. Cover the bowl and let the berries sit for 1 hour. This will help the flavors meld and the berries release their natural juices.
  4. After the resting period, transfer the berry mixture to a heavy-bottomed pan and cook it over medium heat. Stir occasionally until the berries soften and the sauce thickens slightly.
  5. Once the berries are cooked and the sauce has thickened, remove from heat and allow the mixture to cool completely. Set aside for later use.

Step 2: Making the Pudding

  1. In a large saucepan, combine the fresh cream and milk. Heat this mixture over medium-high heat until it begins to boil.
  2. Add the finely chopped lemongrass and kaffir lime leaves to the milk mixture. Let it simmer gently for 3-4 minutes, allowing the flavors to infuse the milk and cream.
  3. After 3-4 minutes, turn off the heat and let the milk mixture sit covered for 10 minutes so the flavors continue to infuse.
  4. Strain the mixture to remove the lemongrass and kaffir lime leaves, discarding the solids.
  5. Place the strained milk and cream mixture back into the saucepan and bring it to a gentle boil again.
  6. Stir in the almond meal, instant oats, and sugar. Simmer for 2-3 minutes, stirring frequently to prevent sticking or burning.

Step 3: Assembling the Pudding

  1. Take some of the macerated berries and set them aside for topping later.
  2. Add the remaining macerated berry mixture to the pudding. Continue to stir as the pudding thickens, for about 6-7 minutes, or until it reaches a creamy, pudding-like consistency.
  3. Once thickened, remove from heat and pour the pudding into serving goblets or bowls.

Step 4: Final Touches

  1. Top each serving with the reserved macerated berries.
  2. Chill the pudding in the refrigerator for several hours, preferably overnight, to allow it to set and the flavors to intensify.
  3. Just before serving, garnish with roughly chopped almonds for an added crunch.
