Lemongrass Coconut Rice Recipe

Ingredients:
- 1 cup rice (washed and soaked in water for 30 minutes)
- 1/4 cup green beans (finely chopped)
- 1/4 cup carrot (finely chopped)
- 1/4 cup broccoli (chopped)
- 1/4 cup green peas
- 1 cup coconut milk
- 1 1/2 cups water
- 1/2 tsp ginger (grated)
- 3 whole black peppercorns (crushed)
- 1 lemongrass stalk (cut into 2-3 pieces)
- 2 tsp oil
- Salt to taste
Preparation Time: 15 minutes
Cook Time: 25 minutes
Instructions:
- Heat oil in a pan. Add ginger and chopped vegetables. Cook for about 2 minutes.
- Add rice to the pan and stir well to combine.
- Pour in the coconut milk, water, lemongrass, crushed black pepper, and salt. Bring it to a boil.
- Once it starts boiling, reduce the heat to low, cover the pan, and cook until the water is absorbed and the rice is cooked through.
- Turn off the heat and let it sit, covered, for 8 to 10 minutes.
- After resting, remove the lemongrass stalks and fluff the rice.
- Serve the Lemongrass Coconut Rice with a side of Red Thai curry for a complete dinner meal.
