  • 2 cups sugar
  • 1 cup fresh lemon juice
  • 13 oz heavy cream
  • 2 1/2 cups water (for water bath)

Instructions:

Step Instructions
1 Preheat the oven to 300ยฐF (150ยฐC).
2 Place eight 6 oz. ramekins in a deep baking pan.
3 In a large mixing bowl, whisk together eggs and sugar until smooth.
4 Stir in the fresh lemon juice and heavy cream until well combined.
5 Pour the mixture through a very fine mesh strainer to remove any lumps.
6 Ladle the strained mixture into the prepared ramekins.
7 Place the baking pan with the ramekins in the oven.
8 Carefully pour hot water into the baking pan, filling it halfway up the sides of the ramekins.
9 Cover the pan loosely with aluminum foil.
10 Bake for about 50 minutes, until the edges are set but the centers are still slightly jiggly.
11 Remove from the oven and let the custards cool in the water bath for 10 minutes.
12 Transfer the ramekins to a wire rack to cool completely.
13 Once cooled, refrigerate the custards for at least 6 hours or overnight to allow them to set completely.
14 Before serving, let the custards sit at room temperature for 15 minutes.
15 Garnish with lemon zest or a fresh mint leaf if desired, and serve with crispy gingersnap cookies on the side. Enjoy your creamy lemon custards! ๐Ÿ‹๐Ÿฅ„

Tips:

  • Be cautious not to overcook the custards; they should still jiggle slightly in the center when done.
  • Use fresh lemon juice for the best flavor.
  • For a smoother texture, strain the custard mixture before pouring it into the ramekins.
  • Allow the custards to chill in the refrigerator for optimal consistency before serving.
  • Serve with your favorite cookies or fresh berries for a delightful pairing.

Indulge in the citrusy bliss of these lemon custards, a decadent treat that will surely impress your guests and leave them craving for more!
