Braised Fennel and Onion Pasta Sauce 🍝

Fennel, with its delightful licorice flavor, takes center stage in this sumptuous pasta sauce. Paired with onions and garlic, this dish bursts with savory goodness. Ingredients:

  • 1/4 onion
  • 1 garlic clove
  • 2 fennel bulbs
  • 1 1/2 cups chicken broth
  • 1/2 teaspoon dried marjoram
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon vinegar (optional)

Instructions:

  1. To prepare the fennel, trim the feathery leaves and the outside hollow stalks. You can chop the fronds for garnish or dry them for seasoning purposes.
  2. You’re now left with the fennel bulb. Next, trim off the hard bottom and cut a thin slice off one side of the fennel.
  3. Lay the fennel bulb on the flat side and cut it into thin slices.
  4. In a skillet with a lid, pour the olive oil and heat it over medium heat.
  5. Add the onion to the skillet and cook until translucent, about 5 minutes.
  6. Stir in the garlic and fennel slices, and cook, stirring occasionally, for about 5 minutes.
  7. Add the chicken broth (excluding the vinegar), salt, and pepper. Cover the skillet and cook over medium-low heat until the fennel is just tender, approximately 10 minutes.
  8. If the mixture is too wet, remove the lid and continue cooking until it reaches your desired consistency.
  9. Stir in the dried marjoram and vinegar (if using), and adjust the seasoning according to your taste.
  10. Serve the braised fennel and onion sauce over cooked pasta or as a delightful side vegetable dish.
