Ingredients
- 1 eggplant
- 1/2 cup beef broth
- 1 onion
- 3 garlic cloves
- 6 ounces ground lamb
- 1/2 cup fresh parsley
- 1/4 cup fresh mint
- 2 tablespoons margarine
- 1 tablespoon flour
- 1 cup skim milk
Instructions
1. Prepare the Sauce
- In a medium saucepan, melt margarine over medium heat.
- Add flour and cook, stirring constantly, for about 3 minutes until lightly golden.
- Gradually pour in milk and beef broth, stirring continuously until the mixture thickens, approximately 5 minutes. Set aside.
2. Cook the Vegetables
- Preheat oven to 350Β°F (175Β°C).
- Spray a medium baking dish with vegetable spray.
- In a large skillet, sprayed with vegetable spray, add eggplant slices and beef broth.
- Cook over medium heat, stirring occasionally, until the eggplant is tender, about 8 minutes.
- Remove the eggplant from the skillet and set aside.
- Spray the skillet again and add chopped onions and minced garlic.
- Cook until the onions are golden brown, then add the ground lamb.
- Cook, stirring occasionally, until the lamb is no longer pink, approximately 10 minutes.
- Drain off any excess fat from the skillet, then stir in crumbled feta cheese, chopped parsley, and chopped mint.
3. Assemble and Bake
- Spoon half of the cooked eggplant slices into the prepared baking dish.
- Top with the cooked lamb mixture.
- Layer the remaining eggplant slices over the lamb.
- Pour the prepared sauce evenly over the top.
- Bake in the preheated oven for 30 minutes, or until the top is golden and bubbly.
- Serve hot and enjoy the lighter yet flavorful twist on traditional Moussaka!
