Ingredients

  • 1 eggplant
  • 1/2 cup beef broth
  • 1 onion
  • 3 garlic cloves

  • 1/4 cup fresh mint
  • 2 tablespoons margarine
  • 1 tablespoon flour
  • 1 cup skim milk

Instructions

1. Prepare the Sauce

  1. In a medium saucepan, melt margarine over medium heat.
  2. Add flour and cook, stirring constantly, for about 3 minutes until lightly golden.
  3. Gradually pour in milk and beef broth, stirring continuously until the mixture thickens, approximately 5 minutes. Set aside.

2. Cook the Vegetables

  1. Preheat oven to 350Β°F (175Β°C).
  2. Spray a medium baking dish with vegetable spray.
  3. In a large skillet, sprayed with vegetable spray, add eggplant slices and beef broth.
  4. Cook over medium heat, stirring occasionally, until the eggplant is tender, about 8 minutes.
  5. Remove the eggplant from the skillet and set aside.
  6. Spray the skillet again and add chopped onions and minced garlic.
  7. Cook until the onions are golden brown, then add the ground lamb.
  8. Cook, stirring occasionally, until the lamb is no longer pink, approximately 10 minutes.
  9. Drain off any excess fat from the skillet, then stir in crumbled feta cheese, chopped parsley, and chopped mint.

3. Assemble and Bake

  1. Spoon half of the cooked eggplant slices into the prepared baking dish.
  2. Top with the cooked lamb mixture.
  3. Layer the remaining eggplant slices over the lamb.
  4. Pour the prepared sauce evenly over the top.
  5. Bake in the preheated oven for 30 minutes, or until the top is golden and bubbly.
  6. Serve hot and enjoy the lighter yet flavorful twist on traditional Moussaka!
