Ingredients:

  • 2 Lebanese cucumbers
  • 2 cups water
  • 1/2 cup white wine
  • Zest of 1 lime
  • 2 tablespoons fresh dill, chopped
  • 4 salmon fillets
  • 1/2 cup mayonnaise
  • 2 tablespoons grainy mustard
  • Juice of 1 lime
  • Salt and pepper, to taste

Instructions:

  1. Prepare Cucumber Strips:
    Using a vegetable peeler, peel the cucumbers into long, wide strips. Set aside.

  2. Poach the Salmon:
    In a deep frying pan, combine water, white wine, lime zest, and chopped dill. Bring to a boil over medium-high heat.
