Ingredients:
- 1/3 cup granulated sugar
- 3 cups water
- 1/2 lime rind, grated
- 1 lime, juiced
- 1/2 cantaloupe, peeled, seeded, and cubed
- 1 mango, peeled, pitted, and cubed
- 2 bananas, peeled and sliced
- 2 sprigs of fresh mint
Instructions:
-
In a small saucepan, combine the granulated sugar with water over medium heat, stirring continuously until the sugar is completely dissolved.
-
Remove the saucepan from heat and stir in the grated lime rind and freshly squeezed lime juice. Allow the lime syrup to cool.
Tip: The syrup can be prepared in advance and refrigerated in an airtight container for up to 1 day. Rewarm until fluid, then let it cool to room temperature before using.
-
Meanwhile, prepare the fruits. Peel, seed, and cube the cantaloupe, placing it in a large mixing bowl.
-
Cut off two opposite sides of the mango as close to the pit as possible. Create a grid pattern of 1/2-inch (1 cm) cubes in the flesh of each side, being careful not to cut through the skin. Turn the mango inside out and cut off the cubes, adding them to the bowl.
-
Cut the remaining mango away from the pit, cube it, and add it to the bowl.
Tip: At this point, the prepared fruit can be covered and refrigerated for up to 4 hours if you want to prepare it in advance.
-
Peel and cut the bananas into 1/2-inch (1 cm) thick slices, adding them to the bowl with the other fruits.
-
Pour the reserved lime syrup over the fruit in the bowl. If you like, add the fresh mint sprigs for an extra burst of flavor.
-
Gently toss the fruit with the syrup and mint, ensuring an even coating.
-
