Lindy’s Cheesecake is a luscious and creamy dessert with a delectable crust and a smooth, velvety filling. Infused with fresh lemon and orange zest, this cheesecake has a delightful citrusy flavor that perfectly complements its rich, creamy texture. A true classic, this cheesecake is perfect for special occasions or a sweet finish to any meal.

Ingredients:

For the Crust:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon freshly grated lemon rind
  • 1/2 teaspoon vanilla extract
  • 1/2 cup unsalted butter, softened
  • 1 egg yolk

For the Filling:

  • 1 1/4 cups cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 1/2 tablespoons freshly grated lemon rind
  • 1 1/2 tablespoons freshly grated orange rind
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 egg yolk
  • 1/2 cup heavy cream

Instructions:

  1. Prepare the Crust:

    • Begin by preheating your oven to 450°F (232°C).
    • In a large mixing bowl, combine the flour, granulated sugar, freshly grated lemon rind, vanilla extract, egg yolk, and softened butter.
    • Using your fingers or a pastry cutter, rub the ingredients together until the mixture is well combined and forms a cohesive dough.
    • Lightly dust the dough with a little flour, wrap it in waxed paper, and refrigerate for at least 1 hour. This helps the dough firm up and makes it easier to work with.
  2. Form the Crust:

    • After the dough has chilled, remove it from the refrigerator. Unwrap the dough and place it in an ungreased 9-inch springform pan.
    • Using your hands, evenly pat and spread the dough over the bottom of the pan and up about 2 inches along the sides.
    • Bake the crust in the center of the preheated 450°F (232°C) oven for 10 minutes. Once done, remove it from the oven and set it aside to cool.
  3. Prepare the Filling:

    • Lower the oven temperature to 200°F (93°C).
    • Place the softened cream cheese in a mixing bowl. Beat it at medium speed until it becomes smooth and creamy.
    • Gradually add the granulated sugar, a few tablespoons at a time, beating well after each addition until the sugar is fully incorporated.
    • Beat in the flour, freshly grated lemon and orange rinds, vanilla extract, eggs, and egg yolk, mixing until the filling is smooth and well blended.
    • Finally, stir in the heavy cream, mixing until everything is thoroughly combined.
  4. Bake the Cheesecake:

    • Pour the prepared filling into the cooled cookie crust, smoothing the top with a spatula.
    • Bake the cheesecake in the center of the 200°F (93°C) oven for 1 hour. The cheesecake should be set and slightly firm in the center.
    • After baking, remove the cheesecake from the oven and let it cool in the pan.
  5. Chill and Serve:

    • Once the cheesecake has cooled to room temperature, refrigerate it for at least 3 hours before serving. This allows the flavors to meld and the texture to firm up.
  6. Serving Suggestion:

    • Serve the cheesecake chilled, either plain or with your favorite toppings, such as fresh berries, fruit compote, or a drizzle of caramel sauce.

Enjoy every creamy, zesty bite of Lindy’s Cheesecake! Whether you’re making it for a special occasion or just because, this dessert is sure to delight your taste buds and impress your guests. For more delicious recipes and cooking tips, visit Love With Recipes!
