Description:

Indulge in the delightfully creamy and satisfying Beachgirl’s Basic Low Carb Cheesecake. Originally shared by Beachgirl on the lowcarbfriends website, this recipe offers a versatile foundation that can be customized with various extracts or berries. Whether you opt for the classic version or experiment with different flavors, this cheesecake is sure to impress with its rich taste and low carbohydrate content.

Ingredients:

  • 2 packages of cream cheese
  • 1 cup of Splenda sugar substitute
  • 1 teaspoon of vanilla extract
  • 1 tablespoon of lemon juice
  • 3/4 cup of sour cream
  • 4 large eggs
  • 1 egg yolk
  • 1 1/2 cups of blueberries (optional)

Instructions:

  1. Preheat your oven to 300Β°F (150Β°C).
  2. Blend the cream cheese and Splenda sugar substitute together at a slow to medium speed until smooth.
  3. Add the vanilla extract, lemon juice, and sour cream to the mixture. Mix until smooth and free of lumps.
  4. Incorporate the eggs and egg yolk one at a time, beating very slowly. Avoid overmixing to prevent cracks in the cheesecake.
  5. Gently stir in the blueberries if desired at this point.
  6. Pour the batter into a 9-inch springform pan. For a taller cheesecake, use an 8-inch pan.
  7. Wrap the bottom of the springform pan with a large piece of aluminum foil to create a watertight barrier.
  8. Create a water bath by placing the springform pan in a larger pan filled halfway with water.
  9. Bake in the preheated oven for 1 hour, then reduce the heat to 200Β°F (95Β°C) and bake for an additional hour.
  10. Turn off the oven and leave the cheesecake inside until the oven is completely cool to prevent cracks.
  11. Refrigerate the cheesecake for at least 12 hours before unmolding from the springform pan.
  12. Release the pan and slice the cheesecake.
  13. Serve plain or topped with fresh berries of your choice.
  14. Enjoy the creamy goodness of Beachgirl’s Basic Low Carb Cheesecake!

Tips:

  • For added flavor variety, experiment with different extracts such as hazelnut or almond.
  • To reduce the carbohydrate count further, use DaVinci syrups instead of vanilla extract, but avoid freezing if using syrups.
  • Consider adding a low-carb nut crust for extra texture and flavor (see LowCarb Cheesecake Nut Crust recipe).
