Ingredients:
- 2 packages of cream cheese
- 1 cup of Splenda sugar substitute
- 1 teaspoon of vanilla extract
- 1 tablespoon of lemon juice
- 3/4 cup of sour cream
- 4 large eggs
- 1 egg yolk
- 1 1/2 cups of blueberries (optional)
Instructions:
- Preheat your oven to 300Β°F (150Β°C).
- Blend the cream cheese and Splenda sugar substitute together at a slow to medium speed until smooth.
- Add the vanilla extract, lemon juice, and sour cream to the mixture. Mix until smooth and free of lumps.
- Incorporate the eggs and egg yolk one at a time, beating very slowly. Avoid overmixing to prevent cracks in the cheesecake.
- Gently stir in the blueberries if desired at this point.
- Pour the batter into a 9-inch springform pan. For a taller cheesecake, use an 8-inch pan.
